He took us for a spin in his customised, refrigerated Vito van and chatted about his hectic schedule. Cruising up Smith Street in Collingwood, where Biggie Smalls is located, Delia admits that life is so busy he only cooks for his family about once a week. ‘Generally it’s brunch on Sunday. It’s probably the best day of the week,’ he grins.
When he’s not driving to see suppliers or complete media commitments, Delia is prioritising his son, daughter and wife, Maha, the woman he credits with igniting his passion when the pair travelled around the Middle East. ‘It made me click and think this was the food I wanted to cook,’ he says, which is why his award-winning establishment is also named Maha. ‘She became the matriarch of the restaurant,’ Delia explains.
It hasn’t all been easy, though. He left school early to pursue a career in cooking and says hard work and high expectations helped him get to where he is today. ‘I know every day when I go to bed that I’ve done the maximum that I can do in that day. In the kitchen on the stove, as a father, a husband or a mentor, I have filled my day to the brim,’ Delia says as he pulls up outside Biggie Smalls and adds, ‘Every second in my day is accounted for.’
The push for perfection and efficiency means that even his transport has been tailored to meet his needs. Delia’s Mercedes-Benz Vito has been customised to meet all of his professional needs. The refrigeration built into Delia’s Vito is the result of careful consideration of his professional needs. ‘Perfection is the minimum, you want the best,’ Delia says and knows that whether he needs to travel in comfort or confidently transport premium ingredients, he has the ability to with the Vito.
