Now I have to be careful with this statement but, gee whizz it was good to get out of the Middle East. Don’t get me wrong I love everything about the Middle East. My work is built around it and I have a deep passion and love for the people, cultures and especially the food.
But as a cook it was nice to come to a new part of the world, new flavours, ingredients and a whole new food philosophy. For me Andalusian cuisine was everything I’m trying to achieve back at Maha. It’s taken a traditional Moorish / Middle Eastern base and elevated it in an unrestricted manner. The introduction of nontraditional products and techniques has forged the base for one of the worlds most exciting cuisines.
